Hey guys! I’m back with another recipe since I got such great feedback on my Sweet Apple Snack last week. Shall we call these Food Fridays? I’m not promising that I’ll have one every week, but if I do, they will be in addition to the beauty posts (I realize that not everyone wants to see recipe posts). This week I have a Sweet Chili (spelled Chilli in the UK) Chicken Pizza. Sounds good, no? It’s great because you can adjust this based on the number of people you need to serve. It’s so flexible.
So this is a really easy. Here is everything you’ll need:
You need bread (one slice per person), grated cheese (I’m using mozzarella but cheddar would be fantastic!), sweet chili (chilli) dipping sauce (if you’re in the States, Frank’s makes a really tasty one), precooked chicken (that’s what is in the plastic container… I cooked mine the night before and had the leftover in the fridge, but you could buy some in the deli section of your grocery store), garlic powder, salt, pepper, and butter (not pictured because I suck. Haha).
While your oven is preheating (200 degrees Celsius or about 400 degrees Fahrenheit), pop a slice of toast in the toaster. You want to lightly toast it. If you don’t, it won’t get crispy in the oven.
Once toasted, spread a thin layer of butter on the bread and then add some sweet chili sauce. Adjust to your own taste. I like a moderate amount, but you could add more or less.
Next, add the chicken. Make sure you dice it and then microwave it before adding it to the pizza. If you don’t microwave it, it won’t get hot enough in the oven.
Add the garlic, salt, and pepper. Then top with your cheese.
At this point, all you need to do is stick it in the oven until the cheese melts. Don’t leave it in too long or your cheese will get crunchy and we want it to stay nice and gooey.

Sweet Chili Dipping Sauce
Mozarella Cheese (or whatever you prefer)
1. Preheat oven to 200 degrees Celsius (400 degrees Fahrenheit).
2. Lightly toast bread.
3. Spread thin layer of butter on bread.
4. Spread layer of sweet chili sauce on bread.
5. Dice and microwave chicken.
6. Add chicken to bread.
7. Add garlic, salt, pepper, and cheese.
8. Pop in the oven until the cheese in completely melted.
9. Cut diagonally and enjoy!
